Ingredients:

2 cups fingerling potatoes

2 cups small red potatoes

2 cups small blue potatoes

1/4 cup red onion

3 large hard-boiled eggs

2 tablespoons fresh parsley

1 tablespoon fresh dill

1 tablespoon fresh chives

Dressing:

1/2 teaspoon freshly ground black pepper

1 1/4 teaspoons salt

1 garlic clove, minced

1/4 cup red wine vinegar

2 tablespoons olive oil

2 teaspoons Dijon mustard

Start by prepping all your ingredients. Wash all your potatoes and finely chop the onion, parsley, dill, chives, and egg. Next, boil the potatoes. Put the fingerling and the red potatoes together in the same pot and bring them to a boil. Once they’ve started to bubble, reduce the heat to a simmer and let them cook until tender. Then take them out of the pot to let them cool a bit. In a separate pot, boil the blue potatoes. Once again bring the pot to a boil and then let it simmer until the potatoes are tender. Let them cool and then transfer all the potatoes into a large mixing bowl.

In the mixing bowl, add the onion, parsley, dill, chives, and eggs. Toss the salad so that it’s evenly mixed. In a small bowl, create the dressing. Combine the vinegar, Dijon mustard, olive oil, salt, pepper, and garlic. Whisk well and then pour over the potatoes. Toss the salad so that the dressing evenly coats the vegetables.

Salad Ingredients:

2 cups baby heirloom tomatoes

2 small zucchini

1 small red bell pepper

1 cup fresh corn kernels

1 cup diced peaches

1/2 cup green onions

1 package penne pasta

2 cups shredded chicken

1/3 cup torn fresh basil

1/3 cup torn fresh cilantro

Vinaigrette Ingredients:

3 tablespoons grated Parmesan

2 tablespoons red wine vinegar

1 clove garlic, minced

1/3 cup extra-virgin olive oil

Kosher salt and freshly ground pepper

Start by preparing the food. Cook the chicken and the pasta. While those items are cooking, prepare the vegetables. Cut the baby heirloom tomatoes into halves, slice the zucchini into crescents, and thinly slice the bell pepper and green onions.

Once the chicken and the pasta are ready, combine all the vegetables, pasta, and chicken in a large bowl. Mix all the ingredients together and set the bowl aside.

In a small bowl make the dressing. Combine the Parmesan, vinegar, garlic, and whisk until thoroughly mixed. Next add in the oil and whisk again. Season with salt and pepper and add to the salad.

Toss the salad and garnish with basil and cilantro. Serve and enjoy a meal with your friends and family.
