Summer time is almost here! Get ready for your summer entertaining with this pasta salad recipe. It’s perfect for your backyard get-togethers. With lots of fresh vegetables and a delicious parmesan vinaigrette, this summer salad is sure not to disappoint. Check out how to make this delicious dish. Here’s what you’ll need to get started.

Salad Ingredients:

2 cups baby heirloom tomatoes

2 small zucchini

1 small red bell pepper

1 cup fresh corn kernels

1 cup diced peaches

1/2 cup green onions

1 package penne pasta

2 cups shredded chicken

1/3 cup torn fresh basil

1/3 cup torn fresh cilantro

Vinaigrette Ingredients:

3 tablespoons grated Parmesan

2 tablespoons red wine vinegar

1 clove garlic, minced

1/3 cup extra-virgin olive oil

Kosher salt and freshly ground pepper

Start by preparing the food. Cook the chicken and the pasta. While those items are cooking, prepare the vegetables. Cut the baby heirloom tomatoes into halves, slice the zucchini into crescents, and thinly slice the bell pepper and green onions.

Once the chicken and the pasta are ready, combine all the vegetables, pasta, and chicken in a large bowl. Mix all the ingredients together and set the bowl aside.

In a small bowl make the dressing. Combine the Parmesan, vinegar, garlic, and whisk until thoroughly mixed. Next add in the oil and whisk again. Season with salt and pepper and add to the salad.

Toss the salad and garnish with basil and cilantro. Serve and enjoy a meal with your friends and family.
